In Pega 8.1.x, log categories are database persisted, in the case, if you migrate pr_data table, you should have the same log categories. Check Admin Studio for details.

Logically I do not see any difference between SP-online and SP-on premise except the normal cloud versus on-prem differences. Pega should work either way as long as the connectivity is setup so that the endpoints can be accessed from pega servers.
